Proudly celebrating his family’s roots in moonshine production – and even using the Polish word for moonshine, ‘Bimber’ – Dariusz Plazewski set up his London-based distillery in 2015 with Ewelina Chruszczyk after emigrating from Poland. Bimber is one of only a handful of working distilleries in London and of even fewer in the whisky-making industry. They pride themselves on a natural environment using their own designed wooden washbacks which are left a little dirty so that the bacteria and yeast left behind enhances the next spirit.
